Coconut Pumpkin Pie Smoothie
I have to admit when I first saw pumpkin smoothies I was a little skeptical at first, I mean I like pumpkin but I wasn’t sure about in a smoothie. I’m definitely glad I tried it because it tastes like a decadent dessert without the massive amount of calories. As a person with a major sweet tooth I’m always trying to find better and healthier ways to satisfy my cravings. This shake is also an awesome source of potassium which plays important roles in our body and is involved in both skeletal and smooth muscle contraction, important for cardiac, muscular and even digestive function. In fact according to the USDA nutrient database, one cup of pumpkin actually contains more potassium (505 mg) than a small banana (362 mg).
Ingredients
1 ¼ cups Coconut Almond Milk1 cup Pumpkin Puree, frozen, cubed1 medium Banana, frozen, sliced¼ tsp Pumpkin Pie Spice
Directions:
- Place 1 ¼ cups coconut almond milk at the bottom of the blender.
- Add the pumpkin puree, banana and pumpkin pie spice.
- Blend until smooth. Enjoy!
