Mango Strawberry Salsa Sriracha Mahi-Mahi
It's finally strawberry season and I’m already scheming on ways to include more of these sweet berries into my diet. Strawberries are low in calories (only 45 calories per cup) and a good source of vitamin C, potassium, fiber and antioxidants. They are also lower in natural sugars than some other fruits and a nice option for people with diabetes because 1 ¼ cup of whole strawberries only contains about 15 grams of carbohydrate.These tasty berries are also super versatile for use in both sweet and savory dishes. This mango strawberry salsa is fantastic by itself with a few chips but even better on top of this slightly spicy sriracha mahi mahi.
Mango Strawberry Salsa & Sriracha Mahi Mahi
Ingredients for Mango Strawberry Salsa
1 cup mango, diced1 cup strawberries, diced½ cup red onion, diced½ cup yellow pepper, diced¼ cup of cilantro1 lime, juiced (¼ cup)¼ tsp of pepper
Ingredients for Sriracha Mahi Mahi
4, 3oz pieces Mahi Mahi1 tbsp olive oil1 tbsp sriracha
Directions for Salsa:
In a bowl combine the prepared mango, strawberries, red onion, yellow pepper, and cilantro. Drizzle with the juice of 1 lime and add ¼ tsp of pepper. Let the salsa mixture rest while you prepare and cook the fish.
Directions for Fish:
- Preheat the oven to 425 degrees.
- Cover a baking sheet with aluminum foil.
- Brush each piece of fish with olive oil and then sriracha.
- Bake uncovered for about 18 minutes or until fish flakes easily with a fork.
- Serve the mahi topped with the mango and strawberry salsa.
