Sauteed Vegetable Crustless Quiche

All opinions expressed are my own.Simple dinners are the best. Especially during the work week when time is limited yet you want something satisfying and nutritious. I wanted to make a simple crustless quiche full of sauteed vegetables and diced Jones Dairy Farm Canadian bacon. It was quick to prepare and delicious and satisfying with a simple side salad. Prepare this for brunch or a lite dinner for simple and nutritious meal.
Ingredients:
1 cup steamed broccoli, diced1-2 tbsp of water 5 slices of Jones Dairy Farm Canadian Bacon, diced ½ cup white onion, diced½ cup red pepper, diced¼ cup sweet potato, diced1 tbsp olive oil6 eggs½ cup half & half ¼ tsp black pepper, ground ¾ mozzarella cheese, shredded
Directions:
Preheat oven to 350 degrees. Place 4 ramekins or a 9-inch dish on a rimmed baking sheet.Place 1 cup of diced broccoli in a microwave safe bowl with 1-2 tbsp of water. Microwave for about 2 minutes or until it is tender but still slightly crispy. Set aside.Heat 1 Tbsp of olive oil in a large skillet. Add onions, red peppers, sweet potatoes and diced Jones Dairy Farm Canadian bacon. Cook and stir until softened about 5 minutes. Set aside.In a medium bowl whisk together the eggs, half & half and black pepper. Add the mozzarella cheese, broccoli and sauteed vegetables.Ladle the egg mixture into ramekins, dividing evenly. Bake at 350 degrees for 30-40minutes, until golden brown. Serve with a simple salad.
