Cardamom Pumpkin Apple Oatmeal
Do you still have a carbohydrate hangover from the Thanksgiving holiday? I definitely enjoyed some of my favorite foods but I'm ready to get back on track with a healthy eating routine for the week. Breakfast is one of my favorite meals of the day, probably because I’m a morning person and feel my best and most productive earlier in the day.When it comes to finding a breakfast that will keep me full most of the morning, oatmeal has always been my go-to. I love loading it up with apples, a few raisins and delicious spices. This fall I’ve been adding a little pumpkin puree and a few extra spices to my oatmeal to give it a little something extra (taste and nutrition-wise). It’s fantastic with a cup of tea and a great way to start any day of the week.
Cardamom Pumpkin Apple Oatmeal
Ingredients:
1 cup of water½ cup rolled oats½ cup pumpkin, puree¼ cup apples, diced1 tbsp raisins1 tbsp pecans, chopped½ tsp ground cinnamon½ tsp vanilla extract¼ tsp ground ginger¼ tsp ground cardamom1 tsp maple syrup (optional)
Directions:
Bring 1 cup of water to a boil, stir in oats. Reduce heat to medium and let simmer for 1-minute.Add pumpkin puree, diced apples, raisins, pecans and spices.Cook for about 5 minutes over medium-heat, stirring occasionally.
