Old Bay Buffalo Cauliflower Bites
Football season is here which means that game-day food and beverages like wings, beer and chips are also filling the bellies of millions of Americans. Football game day food however doesn’t have to be loaded with extra calories and fat.You can still get all the flavor without the fat by incorporating more vegetables into your football buffet spread. Now, I know you’re thinking the dietitian is going to recommend a vegetable tray but I’m not! In fact, I think that getting creative and adding football favorite flavors to vegetables is definitely the way to go. Cauliflower is a super food to add to your football food lineup, low in calories and carbohydrates and high in fiber, Vitamin C and folate, it is not only nutritious but delicious.
These spicy Old Bay Buffalo Cauliflower Bites have just as much of a kick as wings without the guilt of extra calories and fat. Serve them ‘wing-style’ with sliced celery and cool, creamy blue cheese dressing. Your guests won’t even miss the fried wings.Spicy Old Bay Buffalo Cauliflower BitesIngredients:1 Head Cauliflower, cut in bite size florets½ Cup Brown Rice Flour1 Tsp Old Bay Seasoning + ¼ tsp Old Bay Seasoning⅓ Cup Frank’s RedHot Buffalo Sauce2 Tbsp Sriracha1 Tbsp Margarine, melted¼ Tsp Garlic Powder½ cup WaterDirections:1. Preheat the oven to 450 degrees Fahrenheit.2. Cut cauliflower into bite size florets.3. In a bowl mix ½ cup brown rice flour, 1 Tsp Old Bay Seasoning and ½ cup water.4. Dip cauliflower pieces in the batter until coated evenly. Place them on a lightly greased, non-stick baking sheet.5. Bake for about 10-12 minutes (look for the batter to harden), flip and bake an additional 5-6 minutes. Remove from oven when done.6. In a separate bowl mix together ⅓ cup Frank’s RedHot Buffalo Sauce, 2 tbsp Sriracha, ¼ tsp Garlic Powder and ¼ tsp Old Bay Seasoning and melted margarine.7. Use a plastic pastry brush to evenly coat eat cauliflower bite with the hot sauce mixture.8. Bake the cauliflower for about 9 minutes or until crispy.9. Remove from the oven.
