3-Ingredient Pineapple Ice Cream

 

Last July was a pretty special and hectic time, I got married to my perfect match, Jon. As our anniversary date approaches I’ve been reflecting on how quickly our first year of marriage has passed and all the things I’ve learned along the way. To celebrate the momentous occasion, I decided to recreate a favorite from our honeymoon in Hawaii— the Pineapple Dole Whip!

For those that haven’t experienced Pineapple Dole Whip, it is soft serve frozen dessert created by the Dole Food Company. It’s pretty delicious (especially on a hot day) and I had my first taste of this creation when we visited the Dole Pineapple Plantation in Oahu, Hawaii.

The original Dole Whip is dairy-free (since 2013), gluten-free, cholesterol-free and fat-free. My version incorporates dairy and has a consistency closer to a creamy soft-serve ice cream than the original Dole Whip. Although not low in carbohydrates, this simple 3-ingredient dessert is a nutritious way to satisfy a sweet tooth and a refreshing way to incorporate fruit for dessert.

3-INGREDIENT PINEAPPLE ICE CREAM

Serves: 6, 1/2 cup servings
Ingredients
1/2 cup 2% milk
1 Banana, Frozen and Sliced
3 cups Pineapple, Frozen and Cubed

DIRECTIONS:

1. Add 1/2 cup of milk, banana slices and pineapple chunks to a food processor.

2. Blend the ingredients together until the mixture is a creamy soft-serve consistency and there are no longer pieces of fruit visible.

3. Put the mixture in an airtight freezer safe container and freeze until solid. Enjoy with fresh fruit and toasted coconut.
